Carrot Celery Salad
- 2 hard boiled eggs, quartered
- 2 large carrots
- stalks celery
- ¾ cup walnuts, coarsely chopped
- ½ cup corn (optional) 1 tsp. paprika
- ¼ tsp. chili powder
- 2 tbs. extra virgin olive oil 2 tbs. apple cider vinegar
- Clean carrot and dice. Chop celery into bite-sized
- Put in bowl: carrot, celery, eggs, walnuts and corn (optional).
- Mix paprika and chili powder with extra virgin olive oil and apple cider
- Pour over salad. Mix well and refrigerate for 30 minutes before
